Place 500 grams of beef mince into a mixing bowl. Add 1 teaspoon of gochujang, 1/2 teaspoon of sesame oil, and 1 tablespoon of soy sauce to the beef mince. Grate 1 clove of garlic and a small knob of fresh ginger directly into the bowl. Add 2-3 stalks of chopped spring onion. Season the mixture with salt and pepper. Mix all the ingredients thoroughly by hand until well combined.

In a separate small bowl, add a large dollop of mayonnaise. Squeeze in a bit of sriracha. Add a little bit of kimchi juice. Mix these sauce ingredients well until they are fully combined and smooth.

Heat a griddle pan until it is nice and hot. Carefully place the prepared Juicy Lucy patties onto the hot griddle pan. Cook for approximately 2 minutes on each side to achieve a good sear and cook the beef to desired doneness, ensuring the cheese inside melts. While the patties are cooking, lightly toast the brioche buns on the griddle until golden brown.

Ensure kimchi is ready for serving on the side. Slice the tomatoes into rounds. Separate lettuce leaves for assembly.

Take the bottom half of a toasted brioche bun. Spread a generous layer of the prepared Korean-twist sauce onto the bottom bun. Place a layer of lettuce on top of the sauce. Add sliced tomatoes. Carefully place a cooked Juicy Lucy patty on top of the vegetables. Add another dollop or layer of the prepared sauce on the patty. Finally, cover with the top half of the brioche bun. Serve immediately with kimchi on the side.
