In a large bowl, combine the flaked salmon, breadcrumbs, egg, mayonnaise, finely chopped onion, fresh parsley, Dijon mustard, lemon juice, garlic powder, paprika, salt, and black pepper. Mix gently until just combined, being careful not to overmix.

Divide the salmon mixture into 6 equal portions. Shape each portion into a thick round patty. If the mixture feels too wet to form patties, add a little more breadcrumbs, 1 tablespoon at a time, until it's workable.

Place the formed patties on a plate or baking sheet and refrigerate for 15–20 minutes. This step helps the patties firm up and hold their shape better during cooking.

Heat the olive oil or vegetable oil in a large skillet over medium heat. Once the oil is shimmering, carefully place the chilled patties into the hot skillet, ensuring not to overcrowd the pan. Cook for 4–5 minutes per side, until they are golden brown and crispy.

Transfer the cooked salmon patties to a plate. Serve them warm with fresh lemon wedges and a sprinkle of extra chopped parsley, if desired.
