In a food processor, pulse the onion and 3 cloves of garlic until finely chopped. Transfer the pulsed mixture to a large mixing bowl.

Add the 1 kg beef mince, 1 tablespoon greek yogurt, 1 teaspoon olive oil, 1 tablespoon paprika powder, 1 tablespoon garlic powder, 1 tablespoon cumin powder, and optionally 1 tablespoon cinnamon to the bowl. Season with pepper and salt, adjusting to taste.

Mix all the ingredients thoroughly with your hands until they are well combined and the mixture is uniform. Shape the seasoned mince mixture into a compact loaf.

Place the mince loaf into an air fryer. Cook at 180°C (350°F) for 25-30 minutes, or until the internal temperature reaches 71°C (160°F) and it is cooked through.

While the mince is cooking, prepare the garlic sauce. In a food processor or blender, pulse 10-15 cloves of garlic until finely chopped.

Add 2 tablespoons neutral oil, 1 tablespoon sour cream, 1 1/2 tablespoons mayonnaise, 1 teaspoon dried oregano, and a splash of water to the pulsed garlic. Add salt, adjusting to taste. Blend all ingredients until the sauce is smooth and creamy.

Once cooked, remove the mince loaf from the air fryer. Using a sharp knife, thinly slice the cooked mince loaf into strips, similar to traditional doner kebab meat.

Heat a pan on the stove over medium-high heat. Add the thinly sliced mince meat to the hot pan. Sear the sliced meat in the pan for 3-5 minutes until it develops crispy edges.

Take a piece of Lebanese bread (or your preferred flatbread). Heat the Lebanese bread on a pan for 30 seconds to 1 minute per side until it is warm and pliable.

Lay the warm bread flat on a clean surface. Spread a generous amount of the homemade garlic sauce evenly over the surface of the bread.

Place a portion of the cooked and seared mince meat on top of the sauce. Add a desired amount of fresh salad components, including shredded lettuce, sliced tomatoes, and sliced red onion, over the meat.

Tightly roll or fold the bread around the filling to create a compact wrap. Serve and enjoy immediately.
