In a large bowl, combine the thinly sliced red cabbage and red onion.

Sprinkle 1 teaspoon of salt over the cabbage and onion mixture. Vigorously massage the vegetables by hand for 3-5 minutes. This helps to tenderize them and draw out moisture.

Pour the fresh lime juice over the massaged cabbage and onion. Massage again for another 1-2 minutes. Let the mixture rest for at least 5 minutes while you prepare the dressing.

In a separate medium bowl, whisk together the tahini, 2 tablespoons of sesame oil, and red pepper flakes until well combined.

Gradually add 1/4 cup of water to the tahini mixture, whisking continuously. Continue to whisk until the dressing becomes smooth, thick, and creamy. Add a little more water if needed to reach your desired consistency.

Pour the creamy tahini dressing over the massaged red cabbage and onion. Add the 1/4 cup of chopped peanuts and 2 tablespoons of sesame seeds. Toss all ingredients thoroughly to ensure the cabbage and onion are evenly coated and the nuts and seeds are well distributed.

Serve the salad immediately. Garnish with an additional drizzle of sesame oil, a sprinkle of more chopped peanuts and sesame seeds, and fresh lime wedges for an extra burst of citrus.
