Add the sliced banana, sliced strawberries, large eggs, and rolled oats into a blender.

Blend all ingredients together until a smooth, pink batter is formed. Scrape down the sides of the blender as needed to ensure everything is incorporated.

Spray a large non-stick pan or griddle with cooking spray and place it over medium heat.

Once the pan is hot, pour small portions of the batter (about 1/4 cup each) onto the pan to form individual pancakes. Do not overcrowd the pan.

Cook the pancakes for 2-3 minutes, or until bubbles appear on the surface and the edges look set.

Carefully flip the pancakes and cook for another 1-2 minutes, or until golden brown on both sides and cooked through.

Transfer the cooked pancakes to a plate and repeat with the remaining batter, spraying the pan with cooking spray between batches if necessary.
