Cut the 800g chicken thighs into bite-sized pieces and place them in a bowl. Add 3 tablespoons of tikka masala paste, 2 tablespoons of Greek yoghurt, 2 minced cloves of garlic, 1 teaspoon of paprika, and 2 tablespoons of olive oil to the chicken. Mix thoroughly to ensure the chicken is well coated with the marinade.

Choose your cooking method for the chicken: Oven: Place the marinated chicken on a baking tray and cook at 200°C fan for 20–25 minutes, turning halfway, until cooked through and golden. Air fryer: Place the marinated chicken in an air fryer basket and cook at 200°C for 12–15 minutes, shaking halfway, until cooked through and golden.

While the chicken is cooking, dice 1/2 a red onion and chop the 2 courgettes. Mince 1 clove of garlic. Heat 10g of butter and 1 tablespoon of olive oil in a pan. Add the diced red onion and chopped courgettes to the pan and sauté until softened. Add the minced garlic and cook for another minute.

In a small bowl, combine 5 tablespoons of Greek yoghurt, the juice from 1 lemon, a small handful of finely chopped mint, and 1 tablespoon of honey. Mix all the sauce ingredients well until fully combined.

Cook the 200g uncooked rice according to the packet instructions. While the rice is cooking, add 1 teaspoon of turmeric and 1 chicken stock cube to the cooking water for flavor and color.

Once all components are cooked, assemble individual bowls. Start with a base of turmeric rice, add the garlic courgettes, and then the chicken tikka. Drizzle generously with the prepared mint yoghurt sauce.
