In a large mixing bowl, combine the warm water, granulated sugar, and active dry yeast. Stir gently and let the mixture sit for 5 to 10 minutes, or until it becomes foamy, indicating the yeast is active.

Add the all-purpose flour, salt, olive oil, and Greek yogurt (if using) to the yeast mixture. Mix with a spoon or your hands until a shaggy dough forms.

Transfer the dough to a lightly floured surface. Knead the dough for 5 to 7 minutes until it becomes smooth and elastic. If the dough is too sticky, add a very small amount of flour, one teaspoon at a time.

Lightly grease a clean bowl with a little olive oil. Place the dough in the oiled bowl, turning it once to coat. Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for 1 hour, or until it has doubled in size.

Once risen, gently punch down the dough to release the air. Divide the dough into 8 equal pieces. Roll each piece into a smooth ball. On a lightly floured surface, roll out each ball into a 6-inch round, about 1/8-inch thick.

Heat a large cast-iron skillet or non-stick pan over medium heat. Once hot, place one pita round in the skillet. Cook for 1 to 2 minutes per side, until the pita puffs up and develops golden-brown spots. Repeat with the remaining pita rounds.
