Preheat your oven to 350°F. Lightly grease a 9-inch pie plate.

In a large bowl, whisk together the granulated sugar, all-purpose flour, and salt until well combined.

In a separate medium bowl, whisk the eggs until lightly beaten. Add the milk, melted butter, and vanilla extract, mixing until smooth.

Gradually add the wet ingredients to the dry ingredients, whisking continuously until the batter is smooth and there are no lumps.

Stir in the shredded coconut. Pour the entire batter into the prepared pie plate.

Bake for 50-60 minutes, or until the top is golden brown and a knife inserted near the center comes out clean. The pie will magically separate into a crust, a custard center, and a toasted coconut topping.

Remove the pie from the oven and let it cool on a wire rack for at least 15 minutes before serving. This allows the custard to set further.
