Prepare the onion: Leave the root intact, then slice the large onion in half. Peel back the outer layer of skin. Make several horizontal cuts into the onion, then turn it 90 degrees and make vertical cuts to dice it finely. Discard the root end.

Dice the pickles into small pieces.

Caramelize onions: Heat a large pan or skillet over medium-high heat. Add 1 teaspoon of oil and 2 tablespoons of unsalted butter to the pan. Add the diced onions and sauté, stirring occasionally, until they are softened and begin to caramelize, about 8-10 minutes. Once caramelized, remove the onions from the pan and set them aside in a bowl.

Cook ground beef: Using the same pan, add the 2 pounds of 80/20 ground beef. Cook the ground beef, breaking it up with a spatula, until it is fully browned and no pink remains, about 7-9 minutes. Use a splatter screen to prevent splatters if desired.

Drain excess fat: Once the beef is cooked, push the meat to one side of the pan and carefully use a paper towel to absorb and drain the excess grease from the pan. Discard the grease-soaked paper towel.

Combine beef mixture: Add the diced pickles and the previously caramelized onions back into the pan with the cooked ground beef. Mix everything together thoroughly.

Season the beef mixture: Season the beef mixture with 1 teaspoon of Nature's Seasoning (or to taste), stirring to combine the seasoning evenly. Continue to cook for another 1-2 minutes until well combined. Set the beef mixture aside.

Prepare the burger sauce: In a measuring cup or small bowl, combine 1 cup of mayonnaise, 1/4 cup of ketchup, 2 tablespoons of yellow mustard, 1/2 teaspoon of Worcestershire sauce, 1/2 teaspoon of hot sauce, 2 tablespoons of sweet relish, and 1/2 teaspoon of Cajun seasoning. Mix all ingredients thoroughly until the sauce is smooth and well combined.

Toast the buns: Heat a flat pan (such as a griddle or crepe pan) over medium heat. Rub a small amount of unsalted butter onto the surface of the pan. Separate the King's Hawaiian slider buns. Place the tops of the buns, cut-side down, onto the buttered pan and toast until golden brown, about 1-2 minutes. Remove the toasted tops and set them aside. Next, place the bottoms of the buns, cut-side down, onto the buttered pan and toast until golden brown, about 1-2 minutes.

Assemble the sliders: Transfer the toasted bottom buns to a baking sheet. Place approximately 8 cheese slices (cut to fit the buns) over the toasted bottom buns. Evenly spoon the cooked beef, onion, and pickle mixture over the cheese layer. Add the remaining 8 cheese slices on top of the beef mixture. Finally, place the toasted bun tops over the cheese layer.

Melt the cheese: Place the baking sheet with the assembled sliders into the preheated 350°F oven. Bake just until all the cheese is melted, about 5-7 minutes.

Serve: Remove the sliders from the oven. Using a knife, cut the block of sliders into individual portions. Serve the Grilled Cheeseburger Sliders immediately, optionally dipping them in the prepared burger sauce.
