Prepare the Burger Patties: Divide the ground beef into 6 equal portions. Roll each portion into a tight ball. Set aside.

Make the Burger Seasoning: In a small bowl, combine salt, black pepper, onion powder, garlic powder, thyme, rosemary, and paprika. Mix thoroughly until well combined.

Prepare the Shack Sauce: In another small bowl, combine mayonnaise, ketchup, yellow mustard, pickle juice, garlic powder, paprika, and cayenne pepper. Mix all ingredients thoroughly until smooth and well combined. Taste and adjust seasoning if needed. Cover and refrigerate until ready to use.

Toast the Buns: Melt butter in a separate pan or on a griddle over medium heat. Place the cut sides of the hamburger buns in the melted butter and toast until golden brown, about 2-3 minutes. Remove and set aside.

Cook the Smash Burgers: Heat a thick-bottomed pan or cast-iron skillet over medium-high heat until it is very hot. Add about 1 tablespoon of high smoke point oil to the hot pan; it should shimmer.

Place a beef ball in the hot pan. Cover the beef ball with a piece of wax or parchment paper. Using a flat metal spatula, firmly smash the beef ball flat into a thin patty. Liberally season the patty with the homemade burger seasoning. Add a spiral of yellow mustard on top of the patty.

Cook for approximately 2-3 minutes, or until the edges are crispy and the patty starts browning through the top. Flip the patty. Immediately place a slice of American cheese on top of the cooked side. Cook for another 1-2 minutes until the cheese is melted and the patty is cooked through. Remove from the pan.

Repeat steps 6 and 7 for the remaining patties. For a double burger, once the second patty is flipped and cheesed, immediately place the first cooked patty on top of the second to stack them and allow the cheese to melt together.

Assemble the Burgers: Take a toasted bottom bun and spread a generous amount of Shack Sauce on it. Add a layer of shredded iceberg lettuce. Place 1 or 2 cooked patties on top of the lettuce. Spread more Shack Sauce on the top bun and complete the burger by placing it on top.

Serve immediately and enjoy your homemade Shake Shack-style smash burger!
