Preheat the oven to 400°F.
In a large mixing bowl, combine the eggplant, zucchini, red and yellow bell peppers, onion, and tomatoes.
Add olive oil, minced garlic, cumin, coriander, chili flakes, turmeric, salt, and black pepper to the vegetables. Toss well to coat evenly.
Transfer the vegetable mixture to a large baking dish and spread out evenly. Bake in the preheated oven for 30 minutes, stirring halfway through.
Remove from the oven, sprinkle with fresh basil, and serve warm.
