Prepare the meats: While the fries are cooking, season both the chuck roast and chicken breast generously with either taco seasoning or an all-purpose seasoning. Cook the chicken breast until fully cooked through (internal temperature of 74°C/165°F) and sear the chuck roast to your desired doneness, then slice or shred both meats into bite-sized pieces.

Weigh ingredients: For each serving, weigh out 100g of air-fried fries, 100g of cooked chuck roast, 100g of cooked chicken breast, 20g of shredded Mexican cheese, and 55g of guacamole. Repeat this for all four servings.

Assemble the asada fries: In each container or serving dish, layer the ingredients in the following order: first the crispy fries, then an even mix of the cooked chuck roast and chicken breast, followed by the shredded Mexican cheese, and finally a dollop of guacamole. Add any optional toppings like pico, salsa, or a squeeze of lime juice.

Reheating tip (if preparing ahead): To reheat, microwave the meat and fries together until warm, then transfer to an air fryer and air fry for 2–3 minutes to crisp the fries back up before adding the cheese and guacamole.
