Place the thinly sliced pork chop into a large mixing bowl.

Add all the marinade ingredients to the bowl: sugar, fish sauce, oyster sauce, soy sauce, dark soy sauce, honey, black pepper, garlic powder, shallot puree, garlic puree, lemongrass paste, and oil.

Mix all the ingredients thoroughly until every piece of pork is well coated with the marinade.

Cover the bowl and refrigerate to marinate for at least 4 hours. For best results, marinate overnight.
