In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

In a separate medium bowl, whisk the large egg, milk, and melted unsalted butter until smooth.

Pour the wet ingredients into the dry ingredients. Stir with a whisk or spatula until just combined. A few lumps are okay; do not overmix.

Preheat a griddle or large non-stick frying pan over medium heat. Lightly grease with a little butter.

Pour about 1/4 cup of batter per pancake onto the hot griddle. Cook for 2 to 3 minutes per side, or until golden brown and cooked through. Flip once bubbles form on the surface and the edges look set.

While the pancakes are cooking or once they are done, prepare your fruit for the faces. Slice the banana into rounds, strawberries into thin slices, and peel and slice the kiwi into half-moons. Have blueberries and mandarin oranges ready.

Once pancakes are cooked, arrange them on individual plates. Let the kids (or your inner child!) get creative by using the fruit to make fun faces on top of each pancake. Use banana slices for eyes, blueberry pupils, strawberry smiles, kiwi ears, or mandarin orange hair.

Serve immediately with maple syrup and whipped cream, as desired.
