Preheat your oven to 180°C (350°F). Lightly grease and flour a 20 cm (8-inch) round cake pan, or line with parchment paper.

In a large mixing bowl, combine the Biscoff spread, vegetable oil, powdered sugar, and milk.

Whisk the mixture thoroughly until all the wet ingredients are well combined and smooth. Ensure there are no lumps of Biscoff spread or powdered sugar.
Add the all-purpose flour, baking powder, and baking soda to the wet mixture in the same bowl.

Mix the ingredients gently with a spatula or whisk until a smooth cake batter forms. Be careful not to overmix, as this can lead to a tough cake.

Gently fold in the 1/2 cup of crushed Biscoff biscuits into the cake batter until just combined.

Pour the prepared cake batter into the greased and floured (or parchment-lined) round cake pan.

Gently tap the cake pan on the counter a few times to evenly distribute the batter and release any trapped air bubbles.

Bake the cake in the preheated oven for 30-35 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean.

Once baked, remove the cake from the oven and let it cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.

Once the cake has cooled completely, spread a generous layer of the remaining Biscoff spread (1/4 cup) evenly over the entire top surface of the cake.

Sprinkle the additional 1/4 cup of crushed Biscoff biscuits on top of the Biscoff spread for garnish.
