Wash, peel, and cut the potatoes into 1/2-inch cubes. In a medium bowl, toss the cubed potatoes with 2 tablespoons of olive oil, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of paprika until evenly coated.

Place the seasoned potatoes in an air fryer basket in a single layer (work in batches if necessary). Air fry at 400°F for 20-25 minutes, shaking the basket at least twice during cooking, until the potatoes are crispy and tender.

While the potatoes are cooking, cut the chicken breasts into 1-inch cubes. In a separate bowl, season the chicken with 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of paprika, 1 teaspoon of onion powder, and 1 teaspoon of Italian seasoning.

Melt 2 tablespoons of butter in a large oven-safe skillet over medium-high heat. Add the seasoned chicken cubes and cook for 8-10 minutes, stirring occasionally, until browned and cooked through.

Reduce heat to medium. Add 2 tablespoons of minced garlic to the skillet with the chicken and cook for 1 minute until fragrant. Pour in 1/2 cup of Buffalo Wild Wings Parmesan Garlic Sauce (or similar) and stir to coat the chicken evenly.

Add the crispy air-fried potatoes to the skillet with the chicken and sauce. Stir everything together gently to combine.

Sprinkle 1 cup of shredded mozzarella cheese evenly over the chicken and potato mixture in the skillet. Place the skillet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. (Alternatively, cover the skillet with a lid and let it sit on the stove until the cheese melts).

Remove from the oven, garnish with 1 teaspoon of dried parsley, and serve hot. Add more Parmesan Garlic sauce if desired.
