Prepare the salad ingredients: In a large mixing bowl, combine the rinsed and drained chickpeas, diced mango, diced red bell pepper, diced cucumber, finely diced red onion, and chopped fresh cilantro.

Start the tadka for the dressing: Heat the vegetable oil in a small saucepan or tadka pan over medium heat. Once the oil is hot, add the mustard seeds and cumin seeds. Cook until the mustard seeds begin to pop and the cumin seeds are fragrant, about 30 seconds to 1 minute.

Add aromatics to the tadka: If using, add the curry leaves and minced green chili to the pan. Cook for another 30 seconds until the curry leaves are crisp and the chili is fragrant. Remove from heat.

Finish the dressing: Carefully pour the hot tadka mixture over the grated ginger in a small bowl. Add the fresh lime juice, honey, chaat masala, salt, and black pepper. Whisk well to combine all the dressing ingredients.

Combine salad and dressing: Pour the prepared tadka-infused dressing over the chickpea and mango mixture in the large bowl. Gently toss until all the ingredients are evenly coated.

Chill the salad: Cover the bowl and refrigerate the salad for at least 15 minutes to allow the flavors to meld. This also makes it more refreshing.

Serve: Taste and adjust seasonings if necessary. Serve chilled as a light lunch or side dish.
