Wash and pat dry the cucumbers. Trim off both ends of each cucumber.

Using the flat side of a large knife or cleaver, 'smack' each cucumber aggressively until it is slightly flattened and broken up. Cut the smacked cucumbers at an angle into smaller, bite-sized pieces.

Transfer the cucumber pieces to a bowl. Add the 1/2 teaspoon of kosher salt and massage it thoroughly into the cucumbers. Let them sit for 5-10 minutes to draw out excess moisture.

Discard the accumulated liquid from the cucumbers. Rinse the cucumbers thoroughly under cold water to remove as much salt as possible. Pat the rinsed cucumbers very dry with paper towels to remove any remaining water. Transfer the dried cucumbers to a serving container or bowl.

Finely mince the garlic cloves. In a separate small bowl, combine the minced garlic, soy sauce, roasted sesame oil, Chinese black vinegar (remember to shake the bottle first), sugar, and sesame seeds. Optionally, add chili oil to taste for a spicy kick. Mix all dressing ingredients well and taste, adjusting seasonings as needed.

Give the prepared dressing a quick stir before pouring it over the dried cucumbers. Close the container or cover the bowl and shake vigorously, or stir, to ensure the cucumbers are evenly coated with the dressing.
