In a medium bowl, whisk together the lemon juice, lemon zest, minced garlic, olive oil, chopped parsley, dried oregano, salt, and black pepper to create the marinade.

Place the pounded chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 4 hours, for best flavor. If marinating longer than 1 hour, turn the chicken occasionally.
