In a large bowl, dissolve the active dry yeast in the warm water. Let it sit for 5 minutes until foamy.

Stir in the granulated sugar, warm milk, melted butter, and egg into the yeast mixture.

Gradually add 3 cups of the all-purpose flour and the salt, mixing until a shaggy dough forms. Add the remaining 1/2 cup of flour as needed, until the dough is soft and slightly sticky.

Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic.

Place the dough in a lightly oiled bowl, turning once to coat. Cover with plastic wrap and let rise in a warm place for 1 1/2 to 2 hours, or until doubled in size.

Once risen, gently punch down the dough. Turn it out onto a lightly floured surface and roll to 1/2-inch thickness.

Using a 3-inch donut cutter or two different sized round cutters (one larger for the donut, one smaller for the hole), cut out the donuts. Place the cut donuts and donut holes on parchment-lined baking sheets.

Cover the donuts loosely with plastic wrap and let rise for another 30-60 minutes, or until puffy.

While the donuts are rising for the second time, prepare the glaze. In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.

Heat the vegetable oil in a large heavy-bottomed pot or Dutch oven over medium heat to 350°F. Do not overcrowd the pot; fry 2-3 donuts at a time.

Carefully place the risen donuts into the hot oil. Fry for 1-2 minutes per side, until golden brown. Donut holes will cook faster, about 30-60 seconds per side.

Remove the fried donuts with a slotted spoon and place them on a wire rack set over a baking sheet to drain excess oil.

While the donuts are still warm, dip each donut into the prepared glaze, turning to coat completely. Place them back on the wire rack to allow excess glaze to drip off and set.
