Cook the pasta according to package directions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water before draining. Set aside.

While the pasta is cooking, heat the olive oil in a large skillet or Dutch oven over medium heat. Add the chopped yellow onion and cook until softened, about 5-7 minutes.

Add the minced garlic to the skillet and cook for 1 minute more until fragrant, being careful not to burn it.

Stir in the undrained diced tomatoes and vegetable broth. Bring the mixture to a simmer and cook for 5 minutes, allowing the flavors to meld.

Reduce the heat to low and stir in the heavy cream. Add the fresh spinach, a handful at a time, allowing it to wilt before adding more. Continue stirring until all the spinach has wilted into the sauce.

Add the cooked and drained pasta to the skillet with the sauce. Stir in the grated Parmesan cheese, salt, and black pepper. If the sauce is too thick, add a splash or two of the reserved pasta water until it reaches your desired consistency.

Serve immediately, garnished with additional grated Parmesan cheese and fresh basil, if desired.
