Preheat the oven to 375°F.

Place the chicken pieces in a large bowl. Season the chicken generously with salt, black pepper, and smoked paprika.

Add the sliced potatoes to the bowl with the chicken. Drizzle with 1 tablespoon of olive oil.

Mix the chicken, potatoes, and seasonings together thoroughly by hand until well coated.

Place an oven-safe bag (turkey size) into a roasting pan.

Add the roughly chopped celery, roughly chopped onion, roughly chopped carrots, and smashed garlic cloves to the bottom of the oven-safe bag.

Carefully pour the seasoned chicken and potatoes on top of the vegetables in the bag.

In a separate measuring cup, dissolve 1 Grandma Eloise's Kickin' Chicken Seasoning Bomb (if using) into approximately 1 cup of Italian herb broth. Mix until the seasoning bomb is fully dissolved and the liquid has a consistent, darker color.

Pour this dissolved broth mixture over the chicken and vegetables inside the bag. This helps give the chicken color in the oven.

Top the chicken with 2 small dollops of butter.

Tie the oven-safe bag tightly closed, ensuring there is some air trapped inside to allow for even cooking.

Place the roasting pan with the bag into the preheated oven.

Roast for approximately 1 hour to 1 hour and 15 minutes at 375°F, or until the chicken is cooked through and the vegetables are tender.

Once cooked, carefully cut open the bag (watch for steam!) and serve the chicken and vegetables immediately.
