In a medium bowl, combine the sliced flank steak with 2 tablespoons of soy sauce, cornstarch, and sesame oil. Mix well and set aside to marinate while you prepare other ingredients.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli florets and stir-fry for 3-4 minutes until tender-crisp. Remove from the skillet and set aside.

Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the marinated beef and cook for 2-3 minutes, stirring frequently, until browned and cooked through. Remove the beef from the skillet and set aside with the broccoli.

Reduce heat to medium. Add the minced garlic and grated ginger to the skillet and sauté for 30 seconds until fragrant. Push the garlic and ginger to one side of the skillet.

Pour the beaten eggs into the empty side of the skillet and scramble until just set, about 1 minute. Break the eggs into smaller pieces and mix with the garlic and ginger.

Add the day-old rice to the skillet. Pour in 3 tablespoons of soy sauce, oyster sauce (if using), and rice vinegar. Stir well to combine, breaking up any clumps of rice. Cook for 2-3 minutes, stirring occasionally, until the rice is heated through and slightly toasted.

Return the cooked beef and broccoli to the skillet with the fried rice. Toss everything together until well combined and heated through, about 1 minute.

Serve immediately, garnished with sliced green onions.
