Preheat the oven to 375°F.
In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, beaten egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
Shape the mixture into 16 meatballs.
Place the meatballs on a baking sheet and bake for 20 minutes, until browned and cooked through.
While the meatballs are baking, heat olive oil in a saucepan over medium heat. Add chopped onion and cook until soft, about 4 minutes.
Add minced garlic to the saucepan and cook for an additional minute.
Stir in crushed tomatoes, sugar, basil, oregano, salt, and pepper. Simmer for 15 minutes, stirring occasionally.
Place 4 meatballs into each sliced sub roll, add marinara sauce, and top with 2 slices of Provolone cheese.
