Preheat your oven to 400Β°F (200Β°C). Line a large baking tray with parchment paper.

Take each salmon fillet and score the skin side with a sharp knife, making 2-3 shallow cuts across the skin. Be careful not to cut through the flesh.

Apply 1/4 cup of Walkerswood Jerk Marinade generously over all sides of the salmon fillets, ensuring they are well coated.

Sprinkle 2 tablespoons of Walkerswood Traditional Jamaican Jerk Seasoning (Hot & Spicy) evenly over the marinated salmon. Rub the seasoning into the scored cuts and all over the fillets.

Place the seasoned salmon fillets on the prepared baking tray, skin-side down.

In a small bowl, combine 1/4 cup of honey and 2 tablespoons of Walkerswood Jerk Marinade. Whisk well until fully combined to create the honey jerk glaze.

Pour the prepared honey jerk glaze evenly over the salmon fillets on the baking tray.

Arrange the fresh pineapple chunks, sliced red onion, sliced red bell pepper, the whole Scotch Bonnet pepper, and fresh thyme sprigs around the salmon on the baking tray.

Bake the salmon in the preheated oven for 25-30 minutes, or until the salmon is cooked through and flakes easily with a fork. The vegetables should be tender and slightly caramelized.

Once baked to perfection, carefully remove the baking tray from the oven.

Serve the sticky honey jerk pineapple salmon immediately, garnished with the roasted vegetables and pineapple. This dish pairs wonderfully with rice.
