Preheat your oven to 380°F. Lightly grease a 9x13 inch baking dish.

In a medium bowl, whisk together the soy sauce, granulated sugar, and water for the spam glaze. Set aside.

Heat the vegetable oil in a large skillet over medium-high heat. Add the diced SPAM in an even layer and cook undisturbed for 3 minutes until browned. Stir and cook for another 2 minutes undisturbed.

Pour the prepared spam glaze over the browned SPAM in the skillet. Stir well to coat, allowing the SPAM to absorb the flavors and become glazed. Cook for 1-2 minutes until the sauce has thickened slightly.

In the prepared baking dish, add the cooked white rice. Drizzle the rice vinegar over the rice and mix gently to combine. Spread the rice into an even layer, but do not press down firmly yet.

Generously sprinkle the Nori Komi Furikake Rice Seasoning over the rice layer. If furikake is unavailable, crumble roasted seaweed snacks over the rice.

Evenly layer the cooked and glazed SPAM over the seasoned rice in the baking dish. Gently press down the entire mixture with a spatula to ensure the rice and SPAM stick together and form a cohesive layer.

Bake the Spam Bake in the preheated oven for 10 minutes.

Remove the Spam Bake from the oven. Drizzle sriracha sauce and spicy mayonnaise over the top. Garnish with chopped scallions and black sesame seeds.

Serve warm by scooping portions onto roasted seaweed snacks. Optionally, add a slice of cucumber to each serving before eating like a small hand roll.
