Fill a saucepan with enough water so that the chicken breasts will be completely submerged with at least 2 inches / 5 cm of water above them.

If desired, add the optional flavorings: 1 quartered lemon, 1 bay leaf (dried or fresh), and 2 minced garlic cloves, to the water.

Bring the water in the saucepan to a rolling boil over high heat.

Carefully place the chicken breasts into the boiling water.

Immediately place a lid on the saucepan. Bring the water back up to a boil.

As soon as the water returns to a boil, IMMEDIATELY remove the saucepan from the stove. Set the covered saucepan aside for 20 minutes. (Note: It is fine to leave the chicken in the water for up to 45 minutes to 1 hour; it will not overcook due to the falling water temperature and residual heat.)

Remove the cooked chicken from the water.

Slice, chop, or shred the chicken as desired for your intended use.
