In a mixing bowl, combine the 150 g cream cheese, 1/2 cup boiled sweet corn, a handful of chopped spring onions (including both greens and whites), 1 teaspoon garlic powder, salt to taste, red chilli flakes as per taste, and 1/2 teaspoon Mexican seasoning. Mix all the ingredients thoroughly until the mixture is smooth and well combined.

Take one wonton wrapper and place a spoonful of the prepared filling in its center. Lightly moisten the edges of this wrapper with water. Place a second wonton wrapper directly on top, creating a "sandwich" with the filling enclosed. Press firmly along the edges to seal them completely, ensuring no filling can escape during frying. Repeat this process for the remaining filling and wonton wrappers.

Heat cooking oil in a pan over medium heat. Carefully place the assembled stuffed wontons into the hot oil. Fry them until they turn golden brown and become crispy on both sides.

Once the wontons are golden and crispy, remove them from the hot oil. Place them onto a plate or a serving tray.

Generously drizzle red Thai chilli sauce and spicy mayo over the fried wontons.

Finish by garnishing the nachos with sliced jalapeños, additional chopped spring onions, and sesame seeds. Serve immediately and enjoy.
