Heat the vegetable oil in a large wok or Dutch oven over medium-high heat.

Add the blended onion, garlic, and ginger paste to the hot wok. Sauté for 3-5 minutes, stirring frequently, until fragrant and lightly golden.

Stir in the yellow curry powder and red chili powder. Cook for 1 minute, stirring constantly, to toast the spices.

Add the tomato paste to the wok and stir well to combine with the spice mixture. Cook for another 1-2 minutes.

Pour in the chicken stock, then add the chicken pieces and potato chunks. Stir to ensure everything is submerged in the liquid.

Add the soy sauce and granulated sugar. Stir everything together.

Bring the curry to a simmer, then reduce the heat to medium-low, cover the wok, and let it simmer for 15 to 20 minutes, or until the chicken is cooked through and the potatoes are tender.

Remove the lid. Stir in the full-fat coconut milk.

Season the curry with salt and MSG to taste. Stir thoroughly to combine all ingredients.

Serve the Prison Curry hot, typically over steamed rice.
