Prepare the shrimp filling: In a medium bowl, combine the minced shrimp, water chestnuts, green onions, grated ginger, soy sauce, sesame oil, cornstarch, egg white, and black pepper. Mix thoroughly until all ingredients are well combined.

Prepare the wonton cones: Lay a wonton wrapper flat on a clean surface. Place about 1 teaspoon of shrimp filling near one corner of the wrapper. Fold the corner over the filling to form a small triangle. Brush the edges of the triangle with beaten egg.
