In a large bowl or a large Ziploc bag, combine the pork spareribs, fish sauce, brown sugar, oyster sauce, ground white pepper, toasted rice powder, minced shallots, minced garlic, and minced lemongrass.

Mix all ingredients thoroughly, ensuring the ribs are evenly coated with the marinade.

Cover the bowl or seal the Ziploc bag and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.

To fry the ribs: Heat a large frying pan over medium heat. Add enough neutral oil to cover the ribs halfway. Once the oil is hot (around 350°F / 175°C), carefully add the marinated ribs to the pan.

Fry the ribs, flipping them every 10 minutes, until they are evenly cooked through and have a beautiful golden-brown color. This typically takes about 20-30 minutes.

Alternatively, to air fry the ribs: Preheat your air fryer to 380°F. Place the marinated ribs in a single layer in the air fryer basket. Cook for 20-30 minutes, flipping every 10-15 minutes, until cooked through and golden brown. Cooking time may vary depending on your air fryer model.

Serve the Sườn Sả Chiên hot with steamed rice or vermicelli rice noodles. Enjoy!
