Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.

In a large mixing bowl, combine the softened butter, 3 tablespoons of honey, and 3 tablespoons of maple syrup. Mix thoroughly with a wooden spoon until the mixture is creamy and well combined.

Stir in the 1 tablespoon of oat milk until fully incorporated into the butter mixture.

Add the self-raising flour, 1/2 teaspoon of cinnamon, and a pinch of salt to the wet ingredients. Mix with the wooden spoon until a cohesive dough forms. It will initially be crumbly but will come together as you continue to mix.

Take portions of the dough, roll them into balls, and then gently flatten them into discs. Place the dough discs onto the prepared baking sheet. Repeat until all dough is used. Bake for 10-12 minutes, or until golden brown.

While the cookies are baking, prepare the apple filling. In a dark pot, combine the finely chopped apples, 2 tablespoons of maple syrup, 1 tablespoon of honey, 1/4 teaspoon of cinnamon, and a splash of water.

Place the pot over medium heat and cook, stirring occasionally, until the apples soften and the liquid reduces, creating a thick, caramelized filling. This should take about 8-10 minutes.

Once the cookies are baked, remove them from the oven. While they are still warm, use a measuring spoon or a similar round-bottomed tool to gently press an indentation into the center of each cookie, creating a well for the filling.

Spoon the warm apple filling into the indentations of each cookie. Carefully transfer the assembled cookies to a serving plate. Serve warm and enjoy!
