In a large bowl, combine all the dry dough ingredients: 2 cups (250g) all-purpose flour, 1 teaspoon instant yeast, 1 tablespoon sugar, and 1/2 teaspoon salt.

Add the wet ingredients to the dry ingredients: 2/3 cup warm milk, 1 tablespoon softened butter, and 1 egg yolk. Mix all the dough ingredients together until combined, then knead the mixture until it forms a smooth dough.

Cover the dough (e.g., with plastic wrap) and let it rise in a warm place until it has doubled in size. This will take approximately 1 hour.

While the dough is rising, prepare the beef filling. Heat 1 tablespoon oil in a pan over medium heat.

Add 2–3 minced garlic cloves and 1/2 small finely chopped onion to the pan and cook until they are softened, about 3-5 minutes.

Add 500g ground beef to the pan and cook until it is browned, breaking it up as it cooks, about 8-10 minutes.

Stir in the seasonings: salt to taste, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon paprika, 1/2 teaspoon red chili powder, 1 teaspoon cumin, 1/2 teaspoon coriander, and 1/2 teaspoon black pepper.

Add 2 tablespoons tomato paste and 1/4 cup water to the beef mixture. Continue to cook until the mixture thickens and becomes flavorful, about 5-7 minutes.

During the last 1–2 minutes of cooking, stir in 1/2 finely diced jalapeño to ensure it remains slightly crisp. Remove from heat and let cool slightly.

Once the dough has risen, divide it into 8 equal portions. Take each portion and flatten it into a disc shape.

Place a spoonful of the prepared beef mixture onto the center of each flattened dough disc. Top the beef mixture with a small amount of caramelized onions. Add a generous amount of Cheddar cheese, Monterey Jack cheese, and Mozzarella cheese on top of the onions and beef.

Carefully gather the edges of the dough around the filling and pinch them together tightly to seal the bun, forming a ball. Place the sealed buns seam-side down on a baking tray lined with parchment paper.
Preheat your oven to 375°F (190°C).

In a small bowl, whisk together 1 whole egg and 1 tablespoon milk until well combined for the egg wash. Brush the tops of the assembled buns with the egg wash.

Bake in the preheated oven at 375°F (190°C) for 15–18 minutes, or until the buns are golden brown.

While the buns are baking or immediately after they come out of the oven, prepare the garlic parmesan butter. In a small bowl, combine 3 tablespoons melted butter, 2 minced garlic cloves, 2 tablespoons Parmesan cheese, chopped parsley, and a pinch of paprika. Mix thoroughly.

Once the hot buns are removed from the oven, immediately brush them generously with the prepared garlic parmesan butter mixture. Serve the buns warm.
