Preheat the oven to 350°F. Lightly grease and flour a 9-inch round cake pan.

In a large bowl, whisk together the all-purpose flour, granulated sugar, light brown sugar, ground cinnamon, ground ginger, ground nutmeg, ground cloves, baking soda, and salt until well combined.

In a high-speed blender, combine the unsweetened applesauce, dairy-free milk, neutral oil, apple cider vinegar, vanilla extract, and the peeled and cored apples. Blend until the mixture is completely smooth and no apple chunks remain.

Pour the blended wet apple mixture into the dry ingredients. Use a whisk to mix everything together until just combined and no dry streaks of flour remain. Be careful not to overmix the batter.

Pour the cake batter into the prepared 9-inch round cake pan. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Allow the cake to cool completely in the pan before attempting to frost it. This will take at least 1 hour.

While the cake cools, prepare the frosting. In a medium bowl, use an electric mixer to cream together the softened vegan butter and dairy-free cream cheese until smooth and fluffy.

Gradually add the powdered sugar to the butter and cream cheese mixture, mixing until fully incorporated and smooth. Scrape down the sides of the bowl as needed.

Add 2 tablespoons of the vegan salted caramel sauce and mix until evenly combined. Taste and add an additional tablespoon of caramel if desired for a stronger flavor.

Once the cake is completely cool, spread the salted caramel 'cream cheese' frosting evenly over the top of the cake using an offset spatula or knife.

Slice and serve the cake immediately, or store in an airtight container at room temperature for up to 2 days, or refrigerated for up to 5 days.
