In a large skillet over medium-high heat, brown the ground beef, breaking it apart with a spoon as it cooks.

Add the diced onion to the browning beef and continue to cook, stirring occasionally, until the beef is fully browned and the onion has softened and become translucent, about 5-7 minutes.

Carefully drain any excess fat from the pan.

Transfer the browned ground beef and cooked onion into a 6-quart or larger slow cooker.

Add the chopped potatoes and chopped carrots to the slow cooker.

Pour in the can of tomato sauce.

Fill the empty tomato sauce can with water and add it to the slow cooker.

Season the mixture with salt, black pepper, garlic powder, onion powder, and Italian seasoning.

Add the bay leaf to the slow cooker.

Stir all the ingredients thoroughly in the slow cooker to combine everything well.

Place the lid on the slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours, or until the beef and vegetables are tender.
