In a medium-sized bowl, combine the 130 grams of bread flour, 6 grams of baking powder, and 1/2 teaspoon of salt. Whisk these dry ingredients together until they are thoroughly combined.

Add the 130 grams of high protein yogurt to the bowl with the dry ingredients.

Using your hand, knead the mixture directly in the bowl until it comes together to form a cohesive dough. This should take about 3-5 minutes.

Lightly dust a clean work surface with a small amount of flour.

Transfer the dough to the floured surface. Using a dough scraper or a knife, divide the dough into four equal portions.

Take one portion of the dough, roll it into a smooth ball, and then use a rolling pin to flatten it into a round disc, about 1/8 to 1/4 inch thick.

Lightly brush some oil onto a pan (such as a cast-iron skillet or non-stick pan) and heat it over medium-high heat on the stove.

Once the pan is hot, carefully place one flattened dough disc onto the pan. Cook for 1-2 minutes per side, or until the pita bread puffs up and develops golden-brown spots. Repeat with the remaining dough portions.

Remove the cooked pita bread from the pan and stack them on a plate or in a clean kitchen towel to keep them warm.

Serve the freshly made pita bread immediately as a sandwich, with dips, or as a side dish.
