Preheat your oven to 400°F (200°C).

In a medium-sized bowl, mash the ripe avocado until it is smooth and creamy.

Add the large egg and shredded cheese to the mashed avocado. Mix thoroughly until all ingredients are well combined and form a cohesive mixture.

Line a baking sheet with parchment paper.

Spoon the avocado mixture onto the prepared baking sheet. Spread it into a ½-inch thick rectangle, or for individual portions, spread into three separate round shapes.

Sprinkle a generous amount of everything bagel seasoning evenly over the top of the avocado bread mixture.

Bake in the preheated oven for 20 to 25 minutes, or until the avocado bread is firm to the touch, golden brown, and slightly crispy around the edges.

Remove the avocado bread from the oven and let it cool slightly on the baking sheet for about 5 minutes before slicing. Serve warm.
