Preheat oven to 180°C (fan).

In a baking dish, combine the chopped dates and bicarb soda. Pour over the boiling water and let sit for 5 minutes to soften. Then, mash the mixture.

Stir in the brown sugar, eggs, vanilla extract, melted butter, self-raising flour, and a pinch of salt into the date mixture. Mix until just combined.

Smooth the pudding mixture evenly over the top in the baking dish.

Bake for 30–35 minutes, or until golden and just set in the center.

While the pudding bakes, prepare the optional toffee sauce. Combine the brown sugar, thickened cream, butter, and a pinch of salt in a small saucepan. Simmer gently for 5 minutes until thickened. Pour over the warm pudding before serving.
