Preheat your oven to 375°F. Line a baking sheet with parchment paper.

In a large skillet over medium heat, add a splash of olive oil. Add the diced bell peppers, diced yellow onion, minced garlic, and sliced Scotch Bonnet pepper (if using). Sauté for 5-7 minutes, until the vegetables are softened.

Add the ground beef to the skillet with the sautéed vegetables. Break the beef apart with a spoon and cook until browned, about 8-10 minutes. Drain any excess fat.

Stir in the chopped fresh thyme, ground allspice, ground ginger, black pepper, and salt. Cook for 1 minute, stirring constantly, until fragrant.

Pour in the beef broth, ketchup, Worcestershire sauce, brown sugar, and Dijon mustard. Stir to combine and bring to a gentle simmer. Cook for 3-5 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Remove the beef mixture from the heat and let it cool slightly for about 5 minutes.

In a large bowl, combine the cooled beef mixture with the panko breadcrumbs and 1 whisked large egg. Mix thoroughly until all ingredients are well incorporated.

Take one piece of coco bread and gently flatten it out slightly with your hands. Place about 1/4 cup of the beef patty filling in the middle of the flattened coco bread.

Carefully roll up the coco bread around the filling, shaping it into a loaf or patty, ensuring the beef mixture is completely enclosed. Pinch the seams to seal. Repeat with the remaining coco bread and filling.

Place the assembled Jamaican Beef Patty Meatloaves on the prepared baking sheet. In a small bowl, whisk together the remaining large egg with 1 tablespoon of water to create an egg wash. Brush the top of each meatloaf generously with the egg wash.

Bake in the preheated oven for 20-25 minutes, or until the coco bread is golden brown and the filling is heated through. The internal temperature of the filling should reach 160°F.

Remove from the oven and let cool for a few minutes before serving. Enjoy your homemade Jamaican Beef Patty Meatloaf!
