Bring a large pot of water to a rolling boil. Add the thin ramen-style noodles and cook for 5 minutes, or until tender. Drain the noodles thoroughly and set aside.

Heat 1 teaspoon of olive oil in a large skillet or wok over medium-high heat. Add the sliced chicken breast to the hot oil.

Season the chicken with salt, black pepper, paprika, and a squeeze of juice from half a lemon. Cook the chicken, stirring occasionally, for 5-6 minutes until it is cooked through and lightly browned.

Remove the cooked chicken from the pan and set it aside. Leave any residual oil and browned bits in the pan.

In the same pan, add the shredded cabbage, julienned carrots, chopped green onions, and sliced celery. Pour in the low-sodium soy sauce and add the minced garlic.

Stir-fry the vegetables frequently until they have softened, about 5-7 minutes.

Return the cooked and drained noodles and the cooked chicken strips to the pan with the softened vegetables. Drizzle 1 tablespoon of honey over the ingredients.

Using tongs, toss the entire mixture thoroughly until all ingredients are well combined and coated in the sauce. Cook for another 1-2 minutes to heat everything through.

Serve the homemade chicken chow mein immediately. Optionally, garnish with red pepper flakes.
