Preheat your oven to 350°F. Line a baking pan with parchment paper and set aside.

In a medium pan, melt the coconut oil over medium heat. Add the diced honeycrisp apple and sauté for 2 minutes.

Season the apples with a pinch of salt, vanilla extract, lemon juice, and pumpkin pie spice. Continue to sauté for another 3-5 minutes, or until the apples have softened slightly. Remove from heat and set aside to cool.

In a large mixing bowl, combine the all-purpose flour, Greek yogurt, maple syrup, vanilla protein powder, a pinch of salt, and baking powder.

Mix all the dough ingredients until they come together to form a cohesive, slightly sticky dough. This should take about 1-2 minutes.

Transfer the dough onto the prepared parchment paper. Divide the dough into four equal portions.

For each portion, flatten the dough to create a disc or flat surface, approximately 3-4 inches in diameter.

Spoon a quarter of the cooled sautéed apple mixture onto the center of each flattened dough piece, gently pressing it down into the dough.

Drizzle a small amount of honey over the top of each fritter.

Bake the apple fritters in the preheated oven for approximately 30 minutes, or until golden brown and cooked through.
