Season the cubed pork shoulder generously with salt and pepper.

In a large pot, add the olive oil and brown the seasoned pork shoulder on all sides over medium-high heat.

Add the diced yellow onion, minced garlic, and chopped carrots to the pot. Sauté until softened, about 5-7 minutes.

Stir in the dried oregano and bay leaf.

Pour in the red wine and allow it to deglaze the pot, scraping up any browned bits from the bottom with a wooden spoon.

Add the chicken broth.

Add the cubed potatoes to the pot.

Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 1 hour.

After 1 hour, stir in the orzo and continue to cook for another 15 minutes, or until the orzo is tender and the stew has thickened slightly.

To prepare the avgolemono, whisk together the eggs and lemon juice in a separate bowl.

Slowly temper the egg-lemon mixture by gradually whisking in about 1 cup of the hot broth from the stew. This prevents the eggs from scrambling.

Once tempered, pour the avgolemono mixture back into the stew in the pot.

Stir the stew constantly over low heat until it thickens to your desired consistency. Do not boil after adding the avgolemono.

Garnish with fresh dill before serving.
