Ingredients

2 tablespoons dried oregano
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons smoked paprika
1/2 teaspoon ground cumin
2 tablespoons fresh parsley, chopped

1/2 cup vegan mayonnaise
1/2 teaspoon garlic powder
1 tablespoon fresh chives, chopped

For Garnish

Place the 3 medium-sized potatoes in a large pot. Cover them with cold, salted water and bring to a boil over high heat. Cook until the potatoes are fork-tender, approximately 15 to 20 minutes. Drain the water thoroughly and allow the potatoes to cool slightly.

Using a potato ricer or a fork/masher, mash the slightly cooled potatoes into a large mixing bowl until they are smooth and free of lumps.

To the mashed potatoes, add the cornstarch, dried oregano, garlic powder, onion powder, smoked paprika, ground cumin, and the 2 tablespoons of chopped fresh parsley.
