Line a baking sheet with parchment paper. This will prevent the bites from sticking.

Spread a thin layer of Trader Joe's creamy salted peanut butter onto one side of each banana slice. You can use a small spoon or a butter knife for this.

Place the peanut butter-covered banana slices onto the prepared baking sheet. Ensure they are in a single layer and not touching.

Transfer the baking sheet to the freezer and freeze for at least 30 minutes, or until the peanut butter is firm. This step helps prevent the peanut butter from melting into the chocolate.

While the bananas are freezing, melt the Trader Joe's semi-sweet chocolate chips with the Trader Joe's coconut oil. You can do this in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth, or use a double boiler.

Remove the frozen banana slices from the freezer. Dip each banana bite into the melted chocolate, ensuring it's fully coated. Let any excess chocolate drip off.

Immediately place the chocolate-covered bites back onto the parchment-lined baking sheet. If desired, sprinkle with Trader Joe's chopped roasted peanuts and/or Trader Joe's sea salt flakes while the chocolate is still wet.

Return the baking sheet to the freezer and freeze for at least 1 hour, or until the chocolate is completely set and the bites are firm. Store the frozen banana bites in an airtight container in the freezer for up to 2 weeks.
