Add 1/2 tablespoon Korean chili pepper flakes (gochugaru), 1 tablespoon Korean chili paste (gochujang), 1 tablespoon chicken bouillon powder, and 1 tablespoon mirin. Stir all the ingredients well to combine them into a smooth sauce. Bring the sauce to a simmer, then reduce the heat to low.

Add 1 cup freshly grated Parmigiano-Reggiano cheese to the simmering sauce. Stir continuously until the cheese is completely melted and the sauce is creamy and smooth. Season the sauce with black pepper to taste.

Return the cooked chicken thighs to the pan with the creamy gochujang sauce, ensuring they are coated. Garnish generously with the chopped green onions (both white and green parts). Serve hot.
