In a clear bowl, combine the sesame paste, peanut butter, soy sauce, black vinegar, sesame oil, sugar, MSG, and salt. Grate the garlic and ginger directly into the bowl. Add 2 tablespoons of chili oil (or less, according to your preference for spiciness). Mix these ingredients together thoroughly.

Bring a pot of water to a rolling boil. Add the 2 bundles of fresh flour noodles and cook according to package directions, typically for a few minutes, until al dente.

Before draining the noodles, carefully reserve 1/2 cup of the hot pasta water. Pour this hot pasta water into the prepared sauce. Whisk the sauce vigorously until it is nice and smooth, with a creamy consistency.

Drain the cooked noodles well and immediately add them to the bowl with the prepared sauce. Toss the noodles with the sauce until they are fully incorporated and evenly coated.

Transfer the sauced noodles into individual serving bowls. Garnish the top generously with julienned cucumber, chopped green onion, and crushed peanuts. Drizzle with a little more chili oil for extra flavor and heat, if desired.

Serve immediately and enjoy your delicious Sesame Noodles!
