In a large pot, bring 6 cups of chicken stock to a rolling boil over high heat.

Add 1 tablespoon of light soy sauce, 1 teaspoon of sesame oil, and 1 teaspoon of white pepper to the boiling stock.

Carefully add the prepared wontons to the boiling soup. Cook the wontons for about 3-4 minutes, or until they float to the surface and are cooked through.

Add the chopped bok choy to the soup. Continue to cook for another minute, or until the bok choy is tender-crisp.

Serve the shrimp wonton soup hot, garnished with chopped scallions before serving.
