Preheat your oven to 500°F. This high temperature helps achieve a crispy crust quickly.

Unroll the pre-made pizza dough and, using a dough scraper or knife, cut it into approximately 12 equal portions.

Generously spray each cup of a 12-cup muffin pan with nonstick cooking spray to prevent sticking.

Place one piece of dough into each muffin cup. Press it down firmly with your fingers, working it up the sides to form a cup-like base.

Spoon about 1 tablespoon of pizza sauce into the bottom of each dough cup.

If desired, sprinkle a small amount of grated Pecorino Romano cheese over the pizza sauce in each cup.

Place a few slices of pepperoni on top of the cheese/sauce layer in each cup.

Add a generous amount of shredded low moisture mozzarella cheese to each cup, filling it about two-thirds full.

Top with a few more slices of pepperoni on top of the mozzarella cheese.

Bake the pizza bites in the preheated oven for 12 to 15 minutes, or until the cheese is bubbly and golden brown, and the edges of the dough are crispy.

Once baked, carefully remove the muffin pan from the oven. Use a small knife to gently loosen the edges of each pizza bite from the pan.

Invert the muffin pan to release the pizza bites onto a clean cutting board or serving platter. Stack them up and drizzle liberally with hot honey before serving immediately.
