Preheat your oven to 400°F (200°C).

In a 9x13 inch baking dish, combine the Boursin cheese, cherry tomatoes, sliced shallot, and peeled garlic cloves.

Drizzle the ingredients in the baking dish with 1 tablespoon of olive oil. Season with 2 teaspoons of Italian seasoning, 1/2 teaspoon of red pepper flakes, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper.

Bake the tomato and Boursin mixture for 30-35 minutes, or until the tomatoes are blistered and bursting.

While the vegetables are baking, season the chicken thighs with 1 1/2 teaspoons of garlic powder, 1 teaspoon of smoked paprika, the remaining 1/2 teaspoon of salt, and the remaining 1/2 teaspoon of black pepper.

Cook the seasoned chicken thighs in a pan over medium-high heat for approximately 5 minutes per side, or until the internal temperature reaches 165°F (74°C). Once cooked, remove from the pan and set aside to rest.

Cook the 8 ounces of penne pasta according to package directions until it is just al dente.

Once the baking dish is removed from the oven, use a fork or potato masher to burst the roasted tomatoes and mash them together with the garlic and Boursin cheese to create a creamy sauce.

Stir the drained and chopped sun-dried tomatoes and 50 grams of freshly grated Parmesan cheese into the sauce in the baking dish.

Add the 2 cups of baby spinach to the sauce and stir until it has wilted.

Add the cooked penne pasta, the cooked chicken (sliced or shredded, as desired), and 1/4 cup of fresh chopped basil to the baking dish. Toss everything together until the pasta and chicken are well coated with the sauce.
