Preheat your oven to 400°F. Cut the yellow potatoes into 1-inch chunks and slice the yellow onion.

Place the cut potatoes and sliced onion into a 9x13 inch baking dish. Drizzle with 1 tablespoon of olive oil and season with your favorite vegetable seasoning. Mix thoroughly with a spatula to ensure they are well-coated.

Pat the chicken thighs dry with paper towels. Place them in a bowl and drizzle with the remaining 1 tablespoon of olive oil.

Season the chicken thighs with adobo seasoning, Mrs Dash onion and herb seasoning, smoked paprika, and Slap Ya Mama seasoning. Rub the seasonings into the chicken, making sure to get it under the skin as well.

Arrange the seasoned chicken thighs on top of the potatoes and onion in the baking dish.

Bake in the preheated oven for 1 hour.

After baking, change the oven setting to broil. Broil the dish for the last 5 minutes to crisp the chicken skin. Keep a close eye on it to prevent burning.

Remove from the oven. Optionally, sprinkle with dried green herbs for garnish. Serve hot and enjoy!
